Where can I change the Success/Failure Stages drop area values?
Click on the Success/Failure Configuration menu on the top bar. A configuration page will appear where you can change these values.

What are “Quick Create Activity Buttons”?
They allow the user to create an activity against a record such as calls, meetings, etc by dropping a create activity drawer
